Making Loaded Sweet Potatoes

Chicken, Cranberry & Coconut Loaded Sweet Potatoes

So once again I have made something so simple yet so frieken delicious. And it contains my favorite, Sweet Potatoes!

What will you need:

  • 1 Sweet potato, preferably a big one, cause aint nobody got time for small sh!t #ThatsWhatMy1stBoyfriendSaid
  • Chicken breasts, 1 or 2, depending how hungry you are
  • Lemon
  • Onion
  • Garlic
  • Baby Marrows
  • Dried Cranberry
  • Coconut Flakes

Steps to follow:

  1. Put Sweet Potato onto boil – About 45 minutes, depending how big it is
  2. Add crushed garlic, onion, olive oil, Salt & pepper to frying pan
  3. Put frying pan on
  4. Lightly fry mixture until crispy, not till the smoke alarm goes off
  5. Add chopped up chicken fillet and some mixed herbs
  6. Squeeze some fresh lemon / lime into mixture
  7. Fry until golden brown, not burnt
  8. Add baby marrows and cranberries
  9. Simmer
  10. Sprinkle chopped up baby spinach
  11. Your Sweet potato should be ready
  12. Cut open, add filling and sprinkle with Coconut

  • 1 Garlic Clove: 5 Calories
  • Baby Marrow (100g): 11 Calories
  • Olive Oil (10ml): 80 Calories

Total Calories: 639

Protein: 33g

Carbohydrates: 77g

Fat: 23g
